Cottage Cheese Pancakes

Syrnyky or Cottage Cheese Pancakes
This is a very simple and quick way of making something sweet for breakfast. In modern Ukraine, it is considered as dessert as well - goes really, really good with a cup of tea.
So, let's make syrnyky - a Ukrainian name for a cottage cheese pancakes.
That's how I made them:

500 grams (or 2 full cups) of cottage cheese
2 eggs
2 tablespoons of sugar
Few drops of liquid vanilla
Grated lemon zest
One cup of flour (and a little bit more flour for coating)
Sunflower oil for frying
(A little note about the oil. Of course, you can use some other vegetable oil for frying, but if you want to get a real Ukrainian taste in this dish, you better use a sunflower one. A sunflower oil is the most popular for cooking in modern Ukraine, and in fact, it always was)

I mixed together a cottage cheese with the rest of ingredients, except the oil, of course, and formed a little pancakes, like, 3 inches in diameter each. Then I started heating an oil. While oil is getting to a frying stage, I slightly rolled each pancake in flour and started frying just like normal pancakes.

Wow! My kitchen was filled with an amazing aroma of cottage cheese + vanilla + lemon zest combination! So was the taste of the pancakes - rich, moist, lemony - just delicious! I normally serve them with a little sour cream on a side, like we use to do back in Ukraine, but you can also use a whipping cream, honey or some fruits for serving.
